Tenderloin tips shall be prepared from any beef tenderloin item that meets these requirements. Tips may consist of any portion of the thin end of the psoas major, psoas minor, or iliacus muscles and shall consist of pieces that are no less than 1.5 square inches (3.8 sq cm) and are no less than 0.5 inch (13 mm) thick at any point.
